Mutton Kola Urundai (Goat sausage or minced Goat meat) Gola Fried Balls

Gola urundai(Balls) are a very famous south indian starter or snack. Mutton kola urundai / mutton meat ball is so famous in Madurai hotels/Mess.

Mutton kola will be on the menu of all non-veg hotels in Madurai. This is a famous recipe in Madurai’s famous restaurants like Amma Mess and Kumar Mess. Hence, I can’t delay posting these mutton meatballs anymore!
Mutton kola urundai fry and gravy are very common in households in and around Madurai. In hotels, they do add egg for a perfect shape, but in a home kitchen, we don’t mind that!

Ingredients

Mutton sausage or mutton kothu kari 1-1/2 kg
Garlic – 10 pods
Ginger – 1/2 inch
Green chilli-10 to 12
Fennel seeds – 2tsp
Cinnamon sticks – 3 half-inch pieces
Green Cordomon- 4 to 5
Cloves – 5
Black pepper corn – 2tsp
Onion – 2
Curry leaves – 1 leaflet
Coriander leaves – 1/2 bunch
Coriander powder – 1tsp
Cumin powder -1tsp
Turmeric powder-1tsp
Salt as required

Steps

Add garlic, ginger, green chilli, fennel seeds, cinnamon sticks, green cardamom, cloves, and black pepper in a mixer grinder and make a smooth paste by adding a little water. The paste should not be too watery. It should be thick and solid.

Add a mutton sausage to a bowl. If mutton is not minced, blend it a little. It should not be too smooth a paste. Usually, if you buy in India, you have to blend it. If you buy a sausage, then no need to blend. I bought it in an American meat shop, hence the fat is added; in India, they remove fat, hence you get perfect gola balls. If fat is there, the shape will not be retained while deep-frying, as fat will melt.

Add 3 to 4 spoons of ground paste, chopped onion, turmeric powder, chopped green chilli, chopped curry leaves, chopped coriander leaves, coriander powder, cumin powder, and mix all together.

Keep this mix in a refrigerator for 3 hrs.

Then make small balls from the mix.

Add 3 to 4 spoons of oil in a pan, put these balls and bake for 20 minutes. The balls will release some water, and they will bake by this water itself. Do not add water yourself. Once the mutton balls are baked, remove them gently from the pan.

Heat some oil and deep fry these balls until golden brown.

Now the Kola mutton balls are ready.
