Indian Style – Asparagus fry

Asparagus is a vegetable that is not usually associated with Indian cooking. The long, bright green spears have tender tips while the tough ends are discarded. Asparagus is a nutrient-rich food that is high in folate and is a good source of potassium, fiber, vitamin B6, vitamins A and C, and thiamin. Many people tend to overlook this delicious vegetable due to a lack of preparation know-how. Now, you can try fresh and tender Asparagus – the Indian way!

Ingredients

One bunch Asparagus

Green Chilli – 3

Mustard seeds – 1tsp

Urad dal – 1tsp

Curry leaves – 1slit

Cumin seeds – 1tsp

Grated Coconut – 3tsp

Chana Dal – 2 tsp

Vegetable oil – 2tsp

Steps

Soak the Chana dal for 1hr. If you plan to prepare Asparagus start soak Chana dal well advanced. So that you no need to wait.

Clean the Asparagus as shown in the picture. Remove the head(White part) and tail (flower) part. Remove the skin. Cut the Asparagus as small pieces.

Heat a pan and apply oil.

Once the oil is hot, add mustard seed, Cumin seed, and urad dal.

Once the mustard seeds start spluttering, add green chili and curry leaves.

Once the green chili flavor starts, add Athe sparagus and stir it. Cook this for 3-4 minutes.

Once cooked, add the soaked Chana and Coconut and stir it for another 1-2 minutes.

Now, Tasty Indian Style Asparagus Fry is ready.
