Brinjal is a king of vegetables in South India. No home function happen without brinjal
recipe, particularly Sambar or spicy curry. The reason is tasty. Relatives keep talk about the
feast taste lifelong. So they usually give high priority on the food. If we make any recipe with
brinjal some extra taste will automatically added. That’s may be brinjal secret.

There are many types of brinjal available in the market. Also name will vary based on region.
In western side, they call it as egg-plant.
This vegetable should be washed very well before cooking. Also we need to make sure to check if any womb inside while cleaning. If it is there we can avoid that brinjal.
Also while cutting, it should be kept in salt water until it added into the recipe. If we kept in
a plate without salt water, it get darken and curry also look dark. Let’s get started.

Ingredients:
Brinjal - 200 gm
Onion - 1
ginger - 1 inch
Garlic pods - 5
Tomato - 2
Roasted gram - 2 tsp
whole pepper corn - ½ tsp
Turmeric powder - 1 tsp
Coriander powder - 1 tsp
Red chilli powder - 1 tsp
pepper powder - ½ tsp
Curry leaves - 2 spring
Coriander leaves for seasoning
Salt as required
Oil for seasoning
Steps:
Just slit the brinjal vertically at both sides without cutting center portion. So that masala will
be go inside , cook faster, also whole brinjals appear in the curry.
Add 2 to 3 tsp of oil in a pan and heat it.
Once oil hot, add 1 sliced onion, 1 inch cut ginger, 5 garlic pods and shallow fry until golden
in color.
Then add 2 tsp of roasted gram and cool down this mix.
Meanwhile, make puree from 2 chopped tomatoes. Also make paste of onion mix we shallow
fried separately.
In the same pan, add 2 tsp of oil and heat. Once oil hot, add ½ tsp of whole peppercorns.
Then add ground onion paste and fry it for a minute.
Now add ½ tsp turmeric powder, 1 tsp coriander powder, 1 tsp red chilli powder, ½ tsp
pepper powder and mix it.
Then add a cup of water and stir it. You could add the whipped onion mix water from mixer
jar.
Now add salt as per your taste and cook for half minute.
Then add tomato puree and stir it. Keep cook this gravy in a low flame in another stove.
In a separate cooking pan, add 2 tsp of oil and heat it. Once oil hot, add 2 spring curry leaves
and slitted brinjals and stir it. Add ½ tsp turmeric powder with it and give a stir.
Now transfer the gravy into this brinjal and mix it.
Now add 2 cup of water and close with lid. Cook this for 5 minutes.
Finally add few coriander leaves for garnishing.
Now the tasty Brinjal spicy curry is ready to serve.
