Ridge gourd is easily available vegetables in the Indian market. Different kind of recipes can be made with this. Lets make a very simple and very time effective fry today.

Ingredients:

Ridge gourd - 1
Onion - 1
Mustard seeds - 1tsp
Urad dal - 1 tsp
Cumin seeds - 1tsp
Curry leaves - 1 spring
Red chilli powder - 1 tsp
Coriander powder - 1 tsp
Turmeric powder - ¼ tsp
Rice dal powder(Podi) - 2 tsp
Sesame Oil for seasoning
Salt as required

Steps:

Peel the edges of the ridge gourd and slightly peel the skin as well. Then chop into small cubes.
Heat 2 tsp of sesame oil in a pan. Once oil hot, add mustard seeds, urad dal, cumin seeds and fry it.

Once starts spluttering, add chopped onion and curry leaves and fry it until onion gets translucent.
Then add ridge gourd and stir it. Keep stir for a minute.

Then add chilli powder, coriander powder, turmeric powder, salt and stir it.
Close the lid and cook for 3 minutes. Ridge gourd will leave some water. That will be more than enough to cook. In case if it is not enough to cook, then spray 1 or 2 tsp of water.

Once cooked, Add dal rice powder and stir it.
Now the tasty,Lovely and very easy Ridge gourd fry is ready for our rice and chppathi.
