Kerala recipes are popular for the unique taste and different style of cooking. Mostly they never use powders in the curry and it has the flavor of coconut oil. Today going to be bitter gourd curry in my blog.

Ingredients:

Bitter gourd - 4
Red chilli - 6
Chana dal - 2 tsp
Fennel seeds - 1 tsp
Cumin seeds - 1 tsp
Urad dal - 1 tsp
Curry leaves - 1 spring
Grated coconut - 3 tsp
Turmeric powder -½ tsp
Salt
Tamarind - 1 gooseberry size
Coconut oil

Steps:

Cut the bitter gourd like in snap. Mix turmeric powder and salt with the cut bitter gourd and keep aside for 15 minutes.
Soak the tamarind in little water.
Meanwhile heat 2tsp of coconut oil in a pan and fry fennel seeds, cumin seeds, urad dal, chana dal, red chilli, curry leaves. Once fried till golden color, just add grated coconut and fry it. No need to fry till golden color.

Grind this mix into fine paste. Add little water while grinding.
Now squeeze the bitter gourd gently and remove out the excess water. This step make sure to remove excess bitter taste.
In a pan heat 2 tsp of oil, add this bitter gourd and fry it. It will leave some water.
Now add the tamarind extract and bring to boil.

Once you start seeing bubbles add the ground paste and mix it.
Cook for 5 to 8 minutes. Now you will start get the nice flavor.
Finally season with mustard seed and curry leaves.
Now the tasty and easy Kerala bitter gourd curry is ready to serve.
