Kerala recipes are special since these are made using coconut oil and very simple. Our cooking concept is if we use less ingredients in the recipe, it will give more taste. We wanted to take Kerala style curry today for dinner with Chapati. So, lets make the authentic kerala style egg plant curry.

Ingredients:

Brinjal/Egg plant - 8
Onion - 1
Tomato - 1
Cumin seeds - 1 tsp
Red chilli powder - 2tsp
Coriander powder - 1tsp
Garam masala - 1tsp
Turmeric powder - 2 tsp
Cinnamon stick - 1 inch
Coconut oil for seasonings

Steps:

Chop the tomato and make it to puree. (You could boil and peel out the skin and make puree to if you have time to add extra taste)
Cut the brinjal into half vertically and apply turmeric powder on the white side in order to avoid the brinjal getting darkness. Generally we cut and put into water. Since it is going for deep fry we need to avoid water.
Heat ¼ cup (or 5 to 6 tsp) of coconut oil in a pan. Once oil hot add the cut brinjal which we applied turmeric powder and fry it for 3 to 4 tsp until the egg plant gets wilted.

Then take out the fried brinjal from oil and keep aside.
In the same oil add cumin seeds and cinnamon stick. When cumin seeds pop out add Onion and stir it until it get translucent. Then add tomato puree and cook for a minute.

Then add Red chilli powder, Coriander powder, Garam masala and stir it.

Cook for half minute. Then add fried egg plant and cook for 3 minutes without adding water. Now the oil will come out on top.
Garnish with Coriander leaves if you have. Now the simple kerala style Egg plant curry is ready to serve.
